Berry Cinn’Apple Teff Porridge

Since our family’s transition to a Whole Food Plant-Based lifestyle a little over 2 years ago, I was on a personal mission to transform my kids idea of what “good” breakfast cereal look like and taste like!  Of course this meant me venturing outside of my local grocery store.  Well it was a venture worth taking!  My adventure led me to  Teff.  This tiny poppy seed sized, gluten-free, vitamin, mineral, and fiber rich whole grain won the prize!

So this hot cereal (porridge) recipe  free of sugar, oil, and salt full of flavor, sweetness, and nutrients hit a home run!  Mission accomplished, all  three of our kids gave this cereal two thumbs up!  And this naturally sweetened hot cereal has become a household favorite even during the hot summer days! Enjoy!

Berry Cinna’Apple Teff Porridge

Serves: 1

 

INGREDIENTS:

1/3 cup Teff

1 cup Water

1 Tbsp  Date Paste, optional for added sweetness

1/2 cup  Applesauce, Unsweetened

1 Tbsp Plant-Based Milk of choice, Unsweetened

1 Tbsp Milled Golden Flaxseed

1/8 tsp Ground Cinnamon

1/8 tsp Vanilla Extract

1/4 cup Fresh Berries of choice

 

DIRECTIONS:

  1. Using a small non-stick pot, combine the Teff, water and date paste. I prefer using a whisk to stir and settle the grain down into the water.  Cover and bring to a boil, then reduce heat to medium heat and simmer for 15-20 minutes, stirring occasionally, until the water is absorbed. Transfer the porridge to a bowl and let stand for 5 minutes, the longer the Teff sits the thicker it gets.

 

  1. While the Teff is simmering, in a small bowl add the applesauce, milk, flaxseed, cinnamon, and extract and whisk together until completely combined and smooth.

 

  1. Pour the applesauce mixture over the Teff. Then top with your fresh berries of choice.  Now indulge!!!!
