Hold The Cheese Please Sauce (Vegan and Nut-Free)

I don’t know too many of us who do not love cheese! Would you believe me if I told you that there’s a way to enjoy all the taste of cheese without dairy, loads of fat, and tons of calories? Well, it’s true! You can indulge in a delicious, creamy, cheesy sauce that will have you saying “Hold the Cheese Please”!

When I transitioned to a plant-based lifestyle, cheese was one of the foods that I thought I would be deprived of. But to my surprise, I quickly learned that there are several plant-based options to making all kinds of cheese sauces using nuts and potatoes like in our Kids’ Mac & Creamy Cashew Cheeze and Cheezy Chickpeas-n-Broccoli. I was even more delighted when I learned that you can also make nut-free cheese sauces using Potatoes and Hemp Seeds for a low-fat option, for those of us who are trying to lose a few pounds but do not want to give up the taste of cheese.

The Hold the Cheese Please Sauce is amazing because of three reasons. First, you don’t have to fire up the stove-top (thank Heaven for the microwave). Secondly, it’s made with simple whole plant-based ingredients that are nutrient-rich, low in calories, and low in fat. Last but not least, a dash of Dill Weed makes this sauce have that sharp tangy cheesy taste that reminds me of sharp cheddar cheese! Now that’s cheese sauce worth living for!

The Dill give this cheese sauce an amazingly sharp, tangy flavor. But whatever you do, don’t leave out the Nutritional Yeast. It gives a wonderful, umami, cheesy flavor to sauces. It can be found in most local grocery stores on the baking aisles with flour. The Hemp Seeds also are worth getting because not only are they extremely healthy for our bodies, but they also add extra creaminess to sauces, dressings, and smoothies. You can also find this in any local grocery store on the baking aisle. You can also purchase them both from Amazon. Miso Paste is another great ingredient to keep on hand. Although Miso Paste does contain salt, it also has an amazing savory taste and enhances the flavor of sauces, soups, and dressings. You can find Miso Paste at any local Asian store and it keeps for several months in the fridge.

This quick and tasty cheese sauce is amazing on everything. We love it poured over potatoes, tacos, burgers, and pasta. We also love it as a dip for chips.

Hold The Cheese Please Sauce

This creamy, tangy, cheesy sauce is the perfect sauce to pour over everything and will have you saying, 'Hold the Cheese Please'!

  • Peeler
  • Plate
  • Measuring spoons & cups

Ingredients
  

  • 1 cup Yukon Gold Potato, peeled and roughly diced (or frozen Butternut Squash or frozen Orange Sweet Potato)
  • ½ cup Frozen Carrots
  • ½ cup Nutritional Yeast
  • 7 tbsp Water add an additional 1 Tbsp if a thinner sauce is desired
  • 4 tbsp Lemon Juice
  • 1 tbsp Apple Cider Vinegar
  • 2 tsp Hemp Seed
  • 1 tsp Dijon Mustard
  • 1 tsp Miso Paste
  • ½ tsp Smoked Paprika
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • tsp Chipotle Pepper
  • tsp Cumin Powder
  • tsp Dill Weed, dried

Instructions
 

  • Peel and dice a medium-sized Yukon Gold Potato (about 1 cup). Place onto a microwave-safe plate. Add the frozen carrots to the plate. Microwave for 6 minutes.
  • While the potatoes and carrots are cooking, add all of the remaining spices and liquids to a blender. Then add the cooked potatoes and carrots. Blend until completely smooth and creamy.
  • Pour, spread, or dip and enjoy!

Notes

Thickness & Spicyness:
The longer the sauce sits the thicker it gets.  Also, the tangy and spiciness of the sauce settle down to a delicious cheddar flavor the longer it rests.  If you like a thinner consistency add one (1) additional Tbsp of water.   
Storage:
The cheese sauce will keep in a tightly sealed glass jar in the fridge for up to 7 days.  The sauce can be eaten chilled or can be rewarmed in the microwave.
