Who would have thought that chickpeas and veggies would make such a tasty sandwich! Whips up in a flash and full of flavor. This sandwich is one of our kids’ faves.
When we initially transitioned to living a whole food plant-based lifestyle ( a little over 3.5 yrs ago), I was so relieved to know that having tasty and filling sandwiches did not have to go out of the window. This recipe inspired and adapted from the 22-Day Revolution definitely saved the day!
I was so excited to make this recipe with my Cashew Mayo and the kids love having our Not-cho Ordinary Doritos to compliment their sandwich. There is totally no deprivation in this lifestyle – we can have it all – just whole food plant-based style!

Ingredients
- 1 15oz can Chickpeas
- 1 stalk Celery
- 1/4 cup Julienne Carrots
- 3 Tbsp Cashew Mayo (or your favorite vegan mayo) (mayo recipe link below)
- 2 Tbsp Dijon Mustard
- 1/4 tsp Smoked Paprika
- 1 Tbsp Sweet Relish
- 1 Handful Baby Spinach, roughly chopped (optional)

Instructions
- Rinse and drain chickpeas well and set aside.
- Cut celery into smaller pieces (about 1") and add to food processor. Add julienne carrots to food processor. Process unit chopped into desired chunkiness.
- Add drained chickpeas and all remaining ingredients to the food processor. Pulse until well blended and somewhat chunky. Be sure not to over-process or you will have hummus. No worries though still just as delicious. 🙂
- Make a sandwich as desired. Enjoy!
