OVEN METHOD: Place Yukons onto cookie sheet lined with parchment paper and bake at 400F for up to 1 hr, or until fork tender. DO NOT recommend steaming, boiling, or pressure cooking Yukons for this recipe. These methods infuses too much moisture into potato and will cause the potato not to crisp up and stick to the griddle.
